Indian Cauliflower Curry Recipes

Crispy white florets bunched together with green leaves—here we are talking about cauliflower that is used for quintessential pakodas, parathas or usually ends as a side-dish. (1) Spiced Cauliflower and Tomato Curry in North Indian Style

Ingredients

• 2 tbsp salt
• 1 tbsp olive oil
• 1 tbsp lemon juice
• 1 tbsp fresh coconut
• 1 small onion (diced)
• Fresh cilantro leaves
• 1 medium cauliflower
• I medium potato (diced)
• ½ tbsp red chili powder
• 2 small tomatoes (diced)
• ½ tbsp cumin seed powder
• ½ tbsp garam masala powder

Instructions

Put salt, coconut powder, chili powder, cumin powder, garam masala, and tomatoes in a blender and make a paste. Now heat olive oil in a pan and sauté cauliflower florets, potatoes and onions. Add some water and cover the pan for 10 minutes. After that, add the blended tomato paste in the pan and let it heat in high flame. Take out the pan after 5 minutes. Lastly, add lemon juice and serve the hot curry with roti or rice.

(2) Cauliflower and Potato Curry

Ingredients

• 1 large onion
• 3 cloves garlic
• 2 tbsp coconut oil
• 2 tomatoes (diced)
• 1 cup coconut milk
• 1 tbsp curry powder
• 1 tbsp cumin seeds
• I inch peeled ginger
• 1 tbsp garam masala
• ¼ cup cilantro leaves
• 2 tbsp coriander seeds
• 1 medium cauliflower
• Pepper and salt to taste
• 1 tbsp turmeric powder

Instructions

To start with, steam cauliflower florets and diced potatoes for 4-5 minutes and keep them aside. Now take a pan, heat up cooking oil, fry cumin seeds and coriander seeds. Then add ginger-garlic, garam masala paste until the paste turn into golden brown color. Next add chopped onions and tomatoes and cook for 3 minutes. You can add ¼ cup yoghurt or coconut oil for creamy curry. Now mix the cauliflower-potato into a pan and top it with curry powder. Lastly, mix salt, and serve it hot with toasted naan or roti.

(3) Cauliflower, Carrots and Chickpea Coconut Curry

Ingredients

• ½ tbsp salt
• 3 cups chickpeas
• 4-5 sliced carrots
• 1 cup coconut oil
• 1 tbsp curry powder
• 1 tbsp fresh lime juice
• 1 medium onion (diced)
• 1-1/2 cups vegetable broth
• 1 large head of cauliflower
• 2 tbsp fresh mint (chopped)
• 3 tbsp grapeseed or coconut oil
• ¼ tbsp flakes of crushed red pepper

Instructions

Heat preferred oil in a big skillet. Add cauliflower florets, onions and sliced carrots; sauté and stir frequently until the onions become transparent. Mix crushed red pepper flakes and curry powder and cook for 1 min. Now add salt, chickpeas and vegetable broth and let it simmer for 5 minutes. Add lemon juice and coconut oil and again simmer it without lid for few minutes. Mix mint and serve hot with rice.
